Wild Game Recipes - Main Dishes

 Jesse Coleman's recipe for deer chili in North Carolina.
This is deer chili that'll serve about 20 bowls, or about 8 or 9 people.

2 lbs. of deer hamburger
1 lbs. of ground sausage (not linked)
3 medium sized onions
1 tsp of salt, pepper, and garlic powder
2 24 oz. cans of diced tomatoes
2 16 oz. cans of kidney beans
2 cups of ketchup
1 cup of chili powder

Brown your sausage and hamburger together and add in the 1 tsp of salt, pepper, and garlic powder before you drain it off. Chop onions in a variety of sized or however you like them and then brown your onions in separate pan with either butter or oil. Once you drain off your meat, add into big pot on med-low heat and toss in onions. Add the 2 cans of diced tomatoes and 2 cans of kidney beans. Stir well until mixed. Add 2 cups of ketchup. Stir well. Add 1 full cup of chili powder and mix well. Cover and let simmer for about 45 minutes to an hour to get all the juices out of the tomatoes. Keep stirring every 5 minutes or so. Keep at a low temp that will not burn the chili at the bottom of the pot, but high enough to keep it hot. When done, it should serve about 20 bowls. Add Texas Pete to taste if you like it hotter, but for most the chili powder is enough!!!

Crock Pot "Smothered Steak" - we've tried this using caribou, venison & lynx, all were delicious! - Pam Mather, Oregon, WI 
1-1/2 lbs. any type lean meat, cut into thin strips (trim off any fat)
1/3 cup flour
1 tsp salt - 1/4 tsp pepper
1 medium onion - sliced thinly
1 green pepper sliced into thin strips (or to taste) 
1 lb can of stewed tomatoes
1 - 4 oz can mushroom stems and pieces, drained 
3 tablespoons molasses
3 Tablespoons Soy Sauce
1 10 oz. pkg. frozen french-style green beans 

Put meat strips, flour, salt and pepper in Crock Pot. Stir well to coat steak. Add all remaining ingredients and stir.. Cover and cook on High 1 hour, then turn to Low for 7 hours. Stir occasionally. Serve over rice (wild rice is good) with good dinner rolls. Makes enough for 4-6 people.
